Chicken and Shrimp Entree with Mango Salsa


Do you want to make the dish featured on New Day Cleveland? Here is the steps you need to make all the delicious food featured on the show!


 

For the Honey Lime Marinated Chicken you will need:

3 - 4 thinner chicken breasts

Zest of 1 lime

1 tbsp dark brown sugar

2 tbsp lime honey

¼ - ½ cup of fresh lime juice

2 tbsp olive oil

2 tbsp soy sauce

1 tbsp Worcestershire sauce

1 garlic clove, minced

salt and pepper to taste


To prepare and make the Honey Lime Marinated Chicken:

  1. Place chicken breasts in a gallon size bag.

  2. Mix together marinade ingredients and pour over chicken.

  3. Marinade for at least 2 hours

  4. Remove chicken breasts and discard marinade and grill on medium to high heat 4-5 minutes per side or until the internal temperature is 165 degrees.


 

For the Grilled Shrimp with Honey Garlic Marinade you will need:

½ cup of garlic honey

¼ cup of low sodium soy sauce

2 tbsp olive oil

4 cloves of garlic, minced

¼ tsp crushed red pepper flakes

1 ½ - 2 lbs of extra large shrimp, thawed if frozen, peeled and deveined

Green onions and fresh parsley for garnish


To prepare and make the Grilled Shrimp with Honey Garlic Marinade:

  1. Whisk together the first five ingredients until well combined. Place shrimp in a gallon size bag and pour the marinade over the shrimp. Massage marinade into shrimp and marinade for 1 hour.

  2. Heat grill over medium-high heat to about 400 degrees.

  3. Place shrimp on grill pan and grill for approximately 2 minutes on each side.

  4. Place on a serving platter and garnish with green onions and parsley if desired.

 

For the Mango Honey Salsa you will need:

1 - 2 large mangoes - diced

1 red pepper - diced

½ english cucumber finely diced

½ red onion finely diced

½ tsp of jalapeno - minced

1 garlic clove - minced

¼ cup of fresh cilantro - chopped

2 tsp - mango honey

½ lime - juiced

salt and pepper to taste


To prepare the Mango Honey Salsa:

Gently toss all ingredients together in a large bowl. Serve with tortilla chips, fish tacos, chicken or shrimp.
